Wild vegetables are organic foods because they grow in mountains or wild fields without pollution. They contain many nutrients such as dietary fibre, mineral elements and microelements. Wild vegetables are richer in proteins, amino acids, vitamins and tasty than cultivated vegetables. Wild vegetables also better resist disases and pests. They are important gene pools for breeding new and special vegetables too.
This book deals with tropical new and special vegetables in Yunnan, China. It contins two parts. Part I introduces wild vegetables in general and contains six chapters. Chapter 1 to chaptr 3 entails research, utilization and ethnobotany on wild vegetables in China. Nutrients and healthy functions of wild vegetables are described in Chapter 4. the cultivation, the eating methods and processing technology are introduced in Chapter 5. Chapter 6 presnts th ovrview of tropical wild vegetables in Yunnan, China.
Part II has color photos describing each species of wild vegetables, including morphology, distribution, edibility, collecting season, cooking mthods, nutrint contents and medicine. There are 149 species in total, arranged according to their edible part; 25 species in the flower group; 15 species in the fruit group; 64 herb species and 37 woody species which use the young stem and leaf; 4 species in bamboo shoot group and 4 species in foot and tuber group.
